The mesh is fine enough that I can skim stock without sucking up all the little herb bits, yet it still lifts a whole spring roll without dragging oil everywhere. Handles hot liquid comfortably and cleans up in seconds.

The flat mesh basket is wide enough to scoop up four spring rolls at once without them slipping through, and the long handle gives me plenty of clearance from the popping oil. I've been skimming broth fat with it too, and it works just as well for that.
