The air pocket design really works — my last batch of brownies came out perfectly even, no burnt edges or dark spots on the bottom. The carbon steel feels sturdy too, not flimsy like my old tray.
I’ve baked three batches of cookies and a sheet of roasted vegetables, and the bottoms come out evenly golden every single time—no scorched spots to scrape off. The carbon steel sheets feel sturdy, and the air pocket really does seem to level out the heat across the whole tray.
The air pocket design is clever—my tray’s surface stayed evenly hot edge to edge, no more scorched crusts on the sides while the middle lagged. Cleanup was just as easy as the bake, and the carbon steel feels sturdy enough for years of use.
